Even though there’s still snow on the ground, March is officially here and spring is about to start.

Help yourself jump into spring with a fruity recipe that will remind you of the desserts at summer barbeques. It only takes a few minutes to make this “Spring Fruit Tart,” and once you’re done, spring will seem that much closer.

First, get a package of refrigerated sugar cookie dough. Put it into a pan and bake it at 325 degrees for about 22 minutes, or until it looks done.Meanwhile, mix a package of cream cheese with a third of a cup of sugar and a half a teaspoon of vanilla extract.

Once the cookie dough has baked and cooled, spread the mixture over the top of it. Make it about half an inch deep.

Now, cut up some fruit and arrange it on top of the cookie. It can be any kind of fruit you want — some good ones for the purpose are kiwis, strawberries, melons, mangoes, blueberries and raspberries.

Now put the cookie in the refridgerator for about an hour, until it’s chilled sufficiently. Then take it out and cut it into pieces.

Now you’re all set to kick off the spring with a cool, fruity dessert. The weather will catch on — sooner or later.
